Makes 12 cupcakes
2 eggs
1 1/2 cups applesauce
1 1/2 cups sugar
1/2 cup cooking oil
2 1/2 cups flour
1 teaspoon baking powder
1/2 teaspoon baking soda
2 teaspoons pumpkin pie spice
1 cup chopped nuts
12 paper baking cups

Directions
- Preheat oven to 350 degrees.
- Line muffin tins with paper baking cups.
- Blend eggs, applesauce, sugar and cooking oil together in a large mixing bowl.
- Dump flour onto applesauce mixture. Sprinkle baking powder, baking soda and pumpkin pie spice over the flour. Using a fork blend leavening and spices into the flour. Continue mixing until the dry ingredients are completely blended into the applesauce mixture.
- Sprinkle nuts over the tops of the cupcakes.
- Spoon batter into baking cups 3/4 full. Place in hot oven and bake for 20 minutes or until a toothpick inserted in the center of one of the cupcakes comes out clean.
