Sweet and crispy, these easy-to-make chicken strips will delight your family.

Serves 4

1/4 cup honey
40 multi-grain crackers
1/4 cup flour
1 pound boneless skinless chicken breast
4 ounces baby spinach
1 cup bean sprouts
1 cup crushed pineapple
32 peanuts
non-stick cooking spray

Directions
  1. Pour honey into a shallow dish.
  2. Crush crackers very fine and place in another shallow dish. Add flour and mix well.
  3. Cut chicken breast into strips.
  4. Preheat oven to 375 degrees.
  5. Spray a baking sheet with non-stick cooking spray.
  6. Roll chicken strips in honey and then in cracker crumbs and flour. Place on baking sheet.
  7. Bake in hot oven for 10 minutes. Check for doneness by slicing into the plumpest part of one strip. When no pinkness appears, chicken strips are done.
  8. Serve with a salad of baby spinach, bean sprouts, pineapple and peanuts.
