Honey Crisp Chicken Strips

honey
flour
boneless skinless chicken breast
baby spinach
bean sprouts
crushed pineapple
non-stick cooking spray
Directions
- Pour honey into a shallow dish.
- Crush crackers very fine and place in another shallow dish. Add flour and mix well.
- Cut chicken breast into strips.
- Preheat oven to 375 degrees.
- Spray a baking sheet with non-stick cooking spray.
- Roll chicken strips in honey and then in cracker crumbs and flour. Place on baking sheet.
- Bake in hot oven for 10 minutes. Check for doneness by slicing into the plumpest part of one strip. When no pinkness appears, chicken strips are done.
- Serve with a salad of baby spinach, bean sprouts, pineapple and peanuts.
