Cheesy Rice Balls

Cheesy Rice Balls

Cheese, beef and rice make tender and filling meatballs. Serve with a salad for a quick and easy supper.

Serves 4

Change the Serving Size

2 cups water
2 cups instant rice
12 ounces extra-lean ground beef
3/4 cup tomato sauce
2 teaspoons red wine vinegar
1 dash Italian seasonings
1 dash garlic salt
1 dash pepper
1/2 cup cottage cheese
1/2 cup grated mozzarella cheese
1/2 cup grated parmesan cheese
1/4 cup Italian bread crumbs
4 side salads
1 spritz non-stick cooking spray

Directions
  1. In a saucepan, heat water on high until boiling. Stir in rice, reduce heat to low and cover.
  2. In a mixing bowl, combine ground beef, tomato sauce, vinegar, Italian seasonings, garlic salt and pepper. Mix well.
  3. Turn oven on to 400 degrees.
  4. Add cheeses and bread crumbs to meat along with cooked rice. Mix everything thoroughly.
  5. Spray a baking pan with non-stick cooking spray. Using an ice cream scoop, drop meat and rice mixture onto broiler pan and shape into balls.
  6. Bake in hot oven until cooked through.
  7. Serve with salad.
