Cheesy Rice Balls
Cheese, beef and rice make tender and filling meatballs. Serve with a salad for a quick and easy supper.

water
instant rice
extra-lean ground beef
tomato sauce
red wine vinegar
Italian seasonings
garlic salt
pepper
cottage cheese
grated mozzarella cheese
grated parmesan cheese
Italian bread crumbs
non-stick cooking spray
Directions
- In a saucepan, heat water on high until boiling. Stir in rice, reduce heat to low and cover.
- In a mixing bowl, combine ground beef, tomato sauce, vinegar, Italian seasonings, garlic salt and pepper. Mix well.
- Turn oven on to 400 degrees.
- Add cheeses and bread crumbs to meat along with cooked rice. Mix everything thoroughly.
- Spray a baking pan with non-stick cooking spray. Using an ice cream scoop, drop meat and rice mixture onto broiler pan and shape into balls.
- Bake in hot oven until cooked through.
- Serve with salad.
