Serves 4

Change the Serving Size

10 ounces chicken
2 ounces onion
2 ounces celery
2 ounces broccoli
1 ounce red bell pepper
1/4 cup mayonnaise
2 tablespoons Ranch salad dressing
1 tablespoon & 1 teaspoon pickle relish
2 teaspoons mustard
1/4 teaspoon pepper
1/4 teaspoon oregano
8 ounces pepper jack cheese
8 slices sourdough bread
margarine

Directions
  1. Drain chicken and place in a mixing bowl.
  2. Mince onion, celery, broccoli and red bell pepper and add to chicken.
  3. Stir in mayonnaise, Ranch salad dressing, pickle relish, mustard, pepper and oregano. Mix well.
  4. Slice cheese.
  5. Spread margarine on one side of each
    of the bread slices.
  6. Place one slice on bread on the griddle
    with margarine side down.
  7. Place half of cheese slices on top of bread. Spread chicken mixture over the cheese. Layer remaining cheese onto chicken salad and top with the other slice of bread, the side spread with the margarine on top.
  8. Turn griddle on to medium heat. Toast until
    first side is golden brown.
  9. Flip sandwich and toast second side to a golden brown.
  10. Serve with chips.
