Cranberry Pecan Muffins

1 1/2 cup flour
1 tablespoon baking soda
2 teaspoons cream of tartar
1 cup dried cranberries
1 teaspoon grated orange peel
1/2 cup chopped pecans
1/4 cup honey
1 egg
1/3 cup olive oil
1 cup vanilla-flavored yogurt



Directions.

  1. Preheat oven to 350 degrees.
  2. Combine flour, cream of tartar and baking soda in a mixing bowl.
  3. Stir in cranberries, orange peel and pecans.
  4. Add honey, egg, oil and yogurt. Stir until moist (do not over mix).
  5. Line baking tins with paper or spray with non-stick cooking spray.  Fill tins 2/3 full.
  6. Place in oven and bake until lightly brown (about 20 minutes).
