Banana Applesauce Pecan Bread

1/3 cup olive oil
1 cup sugar
2 eggs
1/2 cup unsweetened applesauce
2 ripe bananas, mashed
2 cups flour
1 teaspoon baking powder
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 cup milk
1 cup chopped pecans


 


Directions.

  1. Preheat oven to 350 degrees.
  2. Beat olive oil, sugar and eggs together.
  3. Blend in applesauce and mashed bananas.
  4. Dump flour into mixing bowl and sprinkle baking powder, cinnamon and nutmeg evenly over the top.  Using a fork, mix baking powder, cinnamon and nutmeg into flour.  Continue mixing until all ingredients are blended. 
  5. Add milk and beat well.
  6. Stir in pecans.
  7. Spray a loaf baking pan with non-stick cooking spray.
  8. Bake in oven for 45 minutes or until a knife inserted in the middle of the loaf comes out clean.
