Preheat oven to 350 degrees. Spray
muffin tins with non-stick cooking
spray.
Beat together sugar, eggs and olive oil in a
large mixing bowl .
Stir applesauce, milk and oatmeal into egg mixture.
Dump flour onto egg and oatmeal mixture.
Sprinkle baking powder, cinnamon and nutmeg evenly over
the top of the flour. With a fork, blend
baking powder and spices into flour and
continue mixing until everything is completely
blended.
Add nuts and mix well.
Pour by 1/3 cupfuls into muffin tins.
Place in hot oven and bake for 20 minutes or
until a toothpick inserted into the middle of a
muffin comes out clean.
Break eggs for omelet into a mixing bowl and beat well.
Add cheese and beat again.
Melt margarine in an omelet pan over medium heat.
Turn heat to medium low and pour in eggs and cheese.
Cook until edges are firm and then fold.
After 1 minute flip and continue cooking until center is firm.
