Zucchini and Tomato Tuna Melt Sandwich

Seasoned, sauteed zucchini and a slice of fresh tomato melted with pepper jack cheese on a tuna sandwich.

Serves 4

Change the Serving Size

4 ounces zucchini
1 tablespoon & 1 teaspoon olive oil
2 teaspoons dried basil
1 teaspoon dried thyme
1 dash pepper
4 slices bread
6 ounces tuna canned in water
1/4 cup mayonnaise
2 ounces onion
4 slices tomato
2 ounces pepper jack cheese

From kitchen to table in

  1. Slice zucchini very thin and sauté in oil over medium heat until tender.
  2. Sprinkle with basil, thyme and pepper.
  3. Toast bread.
  4. Drain tuna and dice onion. Combine with mayonnaise.
  5. Spread tuna over toast, top with sautéed zucchini, tomato slice and pepper jack cheese.
  6. Place under broiler and toast until cheese melts.
  7. Serve with fruit.
