1 package (6 ounces) chicken flavor rice mix
1 dash dried basil
4 boneless skinless chicken breasts
12 ounces broccoli
6 ounces tomato
4 ounces grated mozzarella cheese

From kitchen to table in

  1. In a large skillet, mix contents of rice mix and water, per package directions, with basil.
  2. Place chicken on top of rice and bring to a boil.
  3. Cover and reduce heat to low. Simmer for 15 minutes.
  4. Top with broccoli and tomato. Cover and continue cooking 5 minutes or until all the moisture has been absorbed.
  5. Sprinkle with cheese and let stand a few minutes before serving.
