Serves 4

Change the Serving Size

1 pound & 8 ounces potato
2 tablespoons & 2 teaspoons olive oil
8 ounces ham
2 ounces green bell pepper
1/4 cup salsa
1/4 cup Italian salad dressing
4 side salad

Directions
  1. Scrub potato well and cook in microwave on high for 10 seconds per ounce.
  2. Submerge potato in cold water.
  3. Dice ham and green pepper.
  4. Slice potato into wedges.
  5. Pour olive oil into a skillet. Add potatoes, ham and green pepper. Cook on medium heat until potatoes are browned. Turn often.
  6. Reduce heat under potatoes to low and pour salsa and Italian salad dressing over skillet contents. Stir to coat.
  7. Serve with salad.
