Mashed Potato and Cranberry Sauce Nut Bread
(Makes 2 loaves of about 10 slices per loaf)

1 cup mashed potatoes
2 cups canned cranberry sauce, whole berry
2 eggs
3/4 cup sugar
1/2 teaspoon cinnamon
1/4 teaspoon cloves
1 3/4 cups quick cooking oatmeal
2 cups flour
1 tablespoon baking powder
1/3 cup olive oil
1 cup chopped nuts



Directions.

  1. Preheat oven to 350 degrees.
  2. Mash together potatoes, cranberry sauce and eggs in a large mixing bowl.
  3. Add sugar, cinnamon and cloves and blend well.
  4. Fold in oatmeal.
  5. Dump flour over the top and sprinkle baking powder evenly over the top of the flour.  Using a fork gently blend baking powder into flour.  Continue blending with the fork until the flour and baking powder have been absorbed into a stiff batter.
  6. Pour olive oil into bowl and mix slightly.  Add chopped nuts and continue mixing until blended making sure to scrape the bottom of the bowl often.
  7. Spray two loaf pans with non-stick cooking spray.  Pour half the batter into each pan, spread the tops to distribute the batter evenly in the pans.  Place in hot oven and bake for one hour or until a toothpick inserted into the middle comes out clean.
