Irish Fajitas

Serves 4

Change the Serving Size

1 pound & 8 ounces potato
4 ounces fajita beef
2 tablespoons olive oil
2 ounces onion
2 ounces green pepper
1/4 cup Ranch salad dressing
2 tablespoons salsa
4 ounces shredded cheddar cheese
sour cream

Low sodium meal

  1. Scrub potato and cook in microwave until done. (Cooking times vary greatly depending on oven wattage and number of potatoes baking. We suggest that you check for doneness every five minutes or so.)
  2. Saute fajita meat in olive oil. When meat has almost reached the desired doneness add sliced onions and peppers, salad dressing and salsa. Continue cooking until vegetables are tender.
  3. Top baked potato with beef mixture and cheese. Serve with guacamole and sour cream if desired.
