- Scrub potato and cook in microwave until done. (Cooking
times vary greatly depending on oven wattage and number
of potatoes baking. We suggest that you check for doneness
every five minutes or so.)
- Sauté fajita meat in olive oil. When meat has almost
reached the desired doneness add sliced onions and peppers,
and salsa. Continue cooking until vegetables are tender.
- Top baked potato with beef mixture and cheese. Serve with guacamole and sour cream if desired.
