Crockpot Tortilla Stack

Corn tortillas layered with spicy ground beef and cottage cheese become a warm and spicy Mexican meal in your slow cooker.

Serves 4

Change the Serving Size

12 ounces ground beef
4 ounces onion
1 clove garlic
2 cups tomato sauce
1/2 cup salsa
1/2 cup instant rice, uncooked
12 leaves baby spinach
1 cup non-fat cottage cheese
5 corn tortillas

Directions
  1. Brown ground beef in a skillet over medium heat. Drain. Set aside.
  2. Dice onion and garlic and brown in the skillet over medium heat.
  3. Return meat to skillet and add tomato, sauce, salsa, and uncooked rice. Continue cooking over medium heat.
  4. Chop spinach leaves and add to skillet.
  5. Place one corn tortilla into the crock pot. Top with a portion of meat sauce and cottage cheese. Add another tortilla and continue layering with meat sauce and cheese for total number of servings.
  6. Cook on low heat for 4 hours.
