1 pound boneless skinless chicken
4 teaspoons olive oil
4 ounces onion
2 cloves garlic
1/2 cup red wine vinegar
4 teaspoons sugar
1 cup canned diced tomatoes
8 slices bread
12 ounces frozen mixed vegetables

  1. In a skillet, brown chicken in oil over medium heat until one side is brown.  Flip and brown other side.
  2. While chicken browns, dice onion and garlic.
  3. Remove chicken from skillet and brown onion in garlic in pan drippings.
  4. Add red wine vinegar, sugar and tomatoes. Return chicken to the pan and bring to a boil. Turn heat to medium-low and continue cooking until all the moisture has been absorbed.
  5. Heat bread and steam vegetables, serve with chicken and tomatoes
