Beef and Pepper Strips with Oven Red Potatoes

Serves 4

Change the Serving Size

1 pound small red potatoes
4 ounces onion
2 cloves garlic
2 tablespoons Italian salad dressing
1 dash Italian seasonings
1 dash pepper
12 ounces beef strips
1 teaspoon olive oil
4 ounces yellow bell pepper
4 ounces green bell pepper
4 ounces red bell pepper
4 stalks fresh cilantro
1 dash oregano
1 dash lemon pepper
non-stick cooking spray

Directions
  1. Preheat oven to 400 and spray a baking dish with non-stick cooking spray.
  2. Scrub potatoes and cut into chunks and place in baking dish.
  3. Dice onion and garlic and add to potatoes.
  4. Drizzle Italian salad dressing over the top and sprinkle with Italian seasonings and pepper.
  5. Cover with foil and place in hot oven. Set timer for 30 minutes.
  6. When timer dings, remove potatoes from the oven, take off foil and stir. Replace, uncovered, into hot oven.
  7. In a skillet heat olive oil over medium heat. Add beef strips and saut.
  8. While beef cooks (stir often), cut peppers into strips and add to skillet.
  9. Chop cilantro and add to skillet along with oregano and lemon pepper.
  10. Continue cooking and stirring until beef reaches desired doneness. (For rare beef, start beef and peppers sauting together). Serve with potatoes.
