Serves 4

8 ounces dry salami
12 ounces cauliflower
6 ounces broccoli
4 radishes
6 ounces onion
2 tablespoons Italian salad dressing
2 tablespoons lemon juice
1 tablespoon & 1 teaspoon red wine vinegar
1 clove garlic, chopped
1 dash Italian seasonings
1 dash dill weed
1 dash marjoram
2 ounces Monterey jack cheese, grated
4 slices French bread


Grocery Shopping List for Warm Cauliflower Salad with Salami

Directions
  1. Slice salami, remove casing and cut into quarters. Brown lightly in a skillet over medium heat. Drain on paper towels.
  2. Chop cauliflower, broccoli, radish and onion and place in a microwave-proof cooking dish with a lid.
  3. In a small bowl mix together Italian salad dressing, lemon juice, red wine vinegar, chopped garlic, Italian seasonings, dill weed and marjoram. Pour over vegetables and add salami.  Cover and cook in microwave for 3 to 5 minutes until vegetables are tender. (Microwave cooking times will vary.)
  4. While vegetables cook, spread margarine over bread and toast in a skillet over medium heat margarine side down. If desired, spread margarine over other side and toast again .
  5. Stir vegetables and sprinkle Monterey jack cheese over the top.
  6. Serve with toasted bread.
