Red potatoes blend with onion and pepper slices dressing of mayonnaise and Italian flavoring with grated carrots for an extra health boost. Team this delcious salad up with a roast beef sandwich.

Serves 4

Change the Serving Size

1 pound red potatoes
4 ounces onion
4 ounces green pepper
2 ounces carrot
1/4 cup Italian salad dressing
2 tablespoons mayonnaise
1 dash pepper
1 dash basil
1 dash chives
4 sandwich rolls
2 tablespoons mayonnaise
2 tablespoons mustard
8 ounces roast beef
4 ounces cheddar cheese
8 slices tomato
8 lettuce leaves

Grocery Shopping List for Roast Beef Sandwich and Red Potato Salad

From kitchen to table in

  1. Scrub potatoes. Cut into pieces, place in
    a saucepan and cover with water.
  2. Heat to boiling. Cover and reduce heat to
    low. Cook until potatoes are tender when pierced with a fork (about 15 minutes).
  3. Drain potatoes and place in a mixing bowl.
  4. Slice onion and green pepper and add to potatoes.
  5. Grate carrot and add to salad.
  6. Mix in Italian salad dressing, mayonnaise, pepper, basil and chives.
  7. Cover and place in refrigerator for 30
  8. Spread mayonnaise and mustard over sandwich roll.
  9. Layer cheese and tomato slices on sandwich
  10. Add roast beef and lettuce.
  11. Serve with chilled potato salad.
