8 flour tortillas
6 ounces grated mozzarella cheese
24 slices salami
4 ounces tomato
4 sprigs fresh basil
4 ounces onion
1 tablespoon & 1 teaspoon red wine vinegar
2 tablespoons olive oil

  1. Lay one tortilla on a bread board or other flat surface. Sprinkle HALF the grated cheese evenly over the top.
  2. Dice salami, tomato, basil and onion and place in a mixing bowl. Sprinkle with red wine vinegar and toss to mix evenly.
  3. Spread meat and vegetables over the layer of cheese on the tortilla.
  4. Sprinkle remaining cheese over the meat and vegetables and lay second tortilla over the top.
  5. Heat olive oil in a skillet over medium-high heat until hot. Reduce heat to medium and carefully transfer quesadilla to skillet. Cook until first side is golden brown, flip and brown second side.
  6. Using a pizza cutter, slice and serve.
