Salmon Patty with Oven-Seasoned Potatoes

Directions
- Preheat oven to 400 degrees.
- Pour olive oil into an oven-proof baking dish. Tilt dish to spread the oil over the bottom of the dish.
- Peel potatoes and slice thin. Place in baking dish.
- Dice onion and add to potatoes.
- Dribble Italian dressing over potatoes and onions. Pour water over the top and then sprinkle with seasonings.
- Cover and place in oven. Set timer for 45 minutes.
- Drain salmon and put into a mixing bowl. Add egg, mayonnaise, lemon juice, and bread crumbs. Mix well, set aside in the refrigerator.
- When timer rings, uncover potatoes and continue cooking.
- Spray a griddle with non-stick spray and heat on medium.
- Using an ice-cream scoop, place salmon mixture onto griddle and press flat.
- Cook until one side is brown. Turn with a pancake turner and brown other side.
- Serve salmon patties and potatoes with a prepared salad.
