Caesar and Italian salad dressings give this simple one-skillet boneless chicken and vegetable meal a delicious mediterranean flavor.

boneless chicken
olive oil
garlic
onion
Caesar salad dressing
Italian salad dressing
red wine vinegar
lemon juice
pepper
Italian seasonings
zucchini
red bell pepper
yellow bell pepper
green bell pepper

Directions
  1. Cut chicken into cubes. Pour olive oil into a skillet add chicken and brown over medium heat until no more pink appears in the middle.
  2. Dice onion and mince garlic. Add to skillet and continue cooking over medium heat.
  3. Stir in salad dressings, red wine vinegar and lemon juice. Sprinkle pepper and Italian seasonings over top. Turn heat to medium low.
  4. Slice zucchini and add to skillet. Stir.
  5. Dice bell peppers and add to skillet. Stir.
  6. Cook for five minutes stirring occasionally.
  7. Add snap peas and stir again.
  8. Mince spinach and stir into skillet. Cook for one minute and serve.
