Roasted New Potatoes with Green Beans and Salad

Roasted New Potatoes with Green Beans and Salad

Meatless meal of tender roasted potatoes, lemony green beans and a fresh salad.

new potatoes
olive oil
paprika
pepper
fresh thyme
canned green beans
lemon juice
margarine

Directions
  1. Preheat oven to 425 degrees. Scrub potatoes and place in a baking dish. Drizzle olive oil over top and sprinkle with seasonings. Cover and bake for 1 hour or until potatoes are tender when pierced with a fork.
  2. Drain most of the liquid from the canned beans and heat in a saucepan over medium heat until the liquid turns into steam. Turn heat off, add margarine and cover. Wait 3 minutes, stir margarine into beans and add lemon, stirring again. Serve with potatoes and salad.
