- Peel potatoes and grate.
- Turn oven on to 400 degrees.
- Beat eggs, rosemary and pepper and buttermilk. Slice onions and add to egg mixture along with potatoes. Stir to blend
- Spray a baking dish with non-stick cooking spray. Pour in potatoes and top with grated cheese.
- Bake 35 to 40 minutes or until a knife inserted into the center comes out clean. Serve with salad and fruit.
