1 pound & 8 ounces potato
2 eggs
1 dash dried rosemary
1 dash pepper
2 cups buttermilk
4 green onions
4 ounces grated cheddar cheese
4 side salads
fresh fruit

Directions
  1. Peel potatoes and grate.
  2. Turn oven on to 400 degrees.
  3. Beat eggs, rosemary and pepper and buttermilk. Slice onions and add to egg mixture along with potatoes. Stir to blend
  4. Spray a baking dish with non-stick cooking spray. Pour in potatoes and top with grated cheese.
  5. Bake 35 to 40 minutes or until a knife inserted into the center comes out clean. Serve with salad and fruit.
