Potato Cakes
Combine shredded potatoes and zucchini with eggs and cheese, shape into patties and sizzle up some crispy potato patties to serve with a fresh salad.

frozen hashbrown potatoes, thawed
shredded zucchini
red onion, diced
shredded pepper jack cheese
shredded cheddar cheese
picante sauce
olive oil
Directions
- Crack eggs into a mixing bowl and beat until fluffy. Add thawed hashbrown potatoes, zucchini, onion, cheese and picante sauce. Mix until well blended.
- Pour oil into a skillet and turn heat on to medium.
- Shape potato mixture into patties with your hands. Place in skillet and cook until both sides are brown and crispy. Turn often.
- Serve with salad
