Pancake Mix Applesauce Muffins

Pancake Mix Applesauce Muffins

Make these muffins on the day before you go shopping! Complete pancake mix instead of flour eliminates the need for milk and eggs.

Makes 12 muffins

From kitchen to table in 2 hours.

3 ripe apples
1/2 cup water
3/4 cup sugar
1/4 cup olive oil
1 1/2 cups oatmeal
1 1/2 cups complete pancake mix
1/4 teaspoon cinnamon
1/2 cup water
1/2 cup chopped walnuts

Directions
  1. Pare and core apples. Cut into small pieces and place in a saucepan. Cover with water and heat on medium-high until water begins to bubble. Reduce heat to medium-low and cook for 1 hour stirring often and smashing the apple pieces as they become soft.
  2. Turn off applesauce and set aside. Spray muffin tins with non-stick cooking spray. Preheat oven to 350 degrees.
  3. In a mixing bowl, stir together sugar and olive oil. Add oatmeal, pancake mix, cinnamon, and applesauce. Blend into a soft dough, add water and beat until all ingredients are thoroughly mixed. Fold in walnuts.
  4. Using a 1/3 measuring cup, fill muffin tins and place in oven.
  5. Bake 35 to 40 minutes or until golden brown and a toothpick inserted into the middle comes out clean.
