Mexican Ham and Cheese Sandwiches
Ham, peppers, cheese and a spicy Mexican sauce make these tortilla wrap sandwiches healthy and delicious.

olive oil
onion
green pepper
red pepper
yellow pepper
salsa
canned diced jalapenos
cheddar cheese
non-stick cooking spray
tortilla chips
Directions
- Dice ham and brown in oil over medium-low heat.
- Dice onion, red, green and yellow peppers and add to ham.
- Add salsa and diced jalapenos. Stir and cook over medium-low heat until vegetables are lightly tender.
- Preheat oven to 400 degrees.
- Spray a baking dish with non-stick spray.
- Cut cheese into slices.
- Spoon ham and pepper mixture into center of tortilla. Top with cheese slices. Fold tortilla over. Secure with toothpicks if necessary.
- Bake in oven until cheese is melted. (About 10 minutes.)
- Serve with tortilla chips.
