Mac and Tuna Toss with Tomato Cilantro Bread

Mac and Tuna Toss with Tomato Cilantro Bread

Pizza-style bread served with warm tossed macaroni and tuna salad. Easy and delicious.

macaroni
tuna
red wine vinegar
olive oil
salsa
green bell peppers
onions
garlic
French bread
pepper jack cheese
tomato
fresh cilantro

Directions
  1. Fill a large saucepan 3/4 full of water. Turn on high and heat to boiling.
  2. While water boils, dice tomatoes, and cilantro, grate cheese and set aside.
  3. Drain tuna and set aside.
  4. In a bowl, mix together red wine vinegar, olive oil and salsa. Add tuna and mix well.
  5. Preheat oven to 400 degrees.
  6. Mince onion, green bell pepper and garlic. Mix with tuna.
  7. Pour macaroni into boiling water and stir. Continue cooking over high heat (turn down slightly if pan begins to boil over) and stir often. Cook until pasta is soft and no white line appears when a piece is bit in two.
  8. While pasta cooks, top bread with grated cheese, diced tomatoes and cilantro. Place in hot oven.
  9. Drain and rinse pasta and mix with tuna. Serve with warm bread.
