Lean Ground Beef and Black Eyed Peas

Directions
- Brown lean ground beef in a skillet over medium heat until no longer pink. Drain and set aside.
- Cut tomatoes into cubes. Dice onions and jalapeno pepper. Wipe cooled skillet with a paper towel. Place vegetables in skillet and cook over medium heat, stirring often until tomatoes are soft and onion is lightly browned.
- Add tomato sauce and salsa to skillet and stir. Chop cilantro and add.
- Stir in instant rice, frozen black-eyed peas and drained ground beef. Reduce heat to medium-low and continue to cook, stirring often until peas are warmed through.
