Lean Ground Beef and Black Eyed Peas

Reduce the sodium and turn up the flavor with a spicy lean-ground beef and black-eyed peas skillet meal.

lean ground beef
fresh tomatoes
onion

tomato sauce no salt
salsa
fresh cilantro
frozen black-eyed peas
instant rice

Directions
  1. Brown lean ground beef in a skillet over medium heat until no longer pink. Drain and set aside.
  2. Cut tomatoes into cubes. Dice onions and jalapeno pepper. Wipe cooled skillet with a paper towel. Place vegetables in skillet and cook over medium heat, stirring often until tomatoes are soft and onion is lightly browned.
  3. Add tomato sauce and salsa to skillet and stir. Chop cilantro and add.
  4. Stir in instant rice, frozen black-eyed peas and drained ground beef. Reduce heat to medium-low and continue to cook, stirring often until peas are warmed through.
