shredded pepper jack cheese
shredded cheddar cheese
- Spray a baking pan with non-stick cooking spray. Turn oven on to 350 degrees.
- In a mixing bowl, beat eggs until frothy. Stir in potatoes, zucchini and cheeses. Chop green onion and blend into potatoes.
- Spread mixture evenly into baking dish and place in hot oven. Bake for 30 minutes or until a knife inserted into the center comes out clean.
- Serve with fruit slices.
