Hot Potato Pie

4 eggs
1 cup frozen hashbrown potatoes
1 cup shredded zucchini
3 ounces shredded pepper jack cheese
2 ounces shredded cheddar cheese
1/4 cup picante sauce
4 green onions
4 ounces fruit slices

Directions
  1. Spray a baking pan with non-stick cooking spray. Turn oven on to 350 degrees.
  2. In a mixing bowl, beat eggs until frothy. Stir in potatoes, zucchini and cheeses. Chop green onion and blend into potatoes.
  3. Spread mixture evenly into baking dish and place in hot oven. Bake for 30 minutes or until a knife inserted into the center comes out clean.
  4. Serve with fruit slices.
