Garlicky Cheese-Crusted Fish

Potatoes, eggs and cheese with tuna and green pepper bake up into a fluffy souffle-style casserole.

How many servings?

From kitchen to table in 30 minutes.

Italian bread crumbs
garlic, minced
cream cheese

water
instant rice
margarine
pepper
frozen mixed vegetables
Italian seasonings

Directions
  1. Preheat oven to 350 degrees. Spray an oven-proof baking dish with non-stick cooking spray.
  2. Mix Italian bread crumbs and garlic in a flat pan.
  3. Soften cream cheese in a saucepan over low heat.
  4. Spread half the softened cream cheese over one side of the fish fillet. Press into garlic and bread crumbs to coat. Repeat with second side of fillet and arrange in baking dish.
  5. Place in oven and bake until golden brown (approximately 15 to 20 minutes).
  6. Heat water on high until boiling. Stir in instant rice, margarine and pepper. Cover and reduce heat to low. Cook until all of the moisture has been absorbed (approximately 10 minutes).
  7. Steam frozen vegetables and season with Italian seasonings. Serve with rice and fish.
