Low in fat and low in sodium, this meatless meal proves that eating healthy can be a flavorful adventure.

How many servings?

tomato
yellow bell pepper

garlic
white fish
lemon juice
thyme
pepper
bread

non-stick cooking spray

Directions
  1. Chop tomato, yellow bell pepper, green onion and garlic.
  2. Preheat oven to 400 degrees.
  3. Spray a baking dish with non-stick cooking spray. Lay fish in pan and top with chopped vegetables
  4. Sprinkle lemon juice, thyme and pepper over the top.
  5. Place in hot oven along with foil-wrapped bread. Bake until fish flakes easily with a fork (about 10 to 15 minutes).
  6. Serve with salad and warm bread.
