Cuban Black Bean Soup with Tuna

Cuban Black Bean Soup with Tuna

Choose hot or mild canned chilies to make a spicy bean soup with the health benefits of tuna.

canned black beans
chicken broth
canned diced tomatoes
canned diced chilies
canned tuna
onion
garlic
red wine vinegar
dried oregano
dried thyme
ground cumin
pepper

Directions
  1. Drain and rinse black beans. Place in a slow-cooker (crockpot) along with chicken broth, undrained diced tomatoes, and undrained canned chilies.
  2. Drain tuna and add to beans. Chop onion and garlic and place in slow cooker along with red wine vinegar and spices.
  3. Turn heat on to low and simmer for 4 to 6 hours.
