Crab Cakes
Crispy on the edges and tender in the center, these crab cakes whip up quickly and make a delicious easy supper with deli potato salad and peaches.

canned crab meat
bread
onion
celery
lemon juice
milk
salsa
pepper
dried parsley
olive oil
potato salad
sliced peaches
Directions
- Drain crab meat and place in a mixing bowl. Beat egg into crab meat.
- Cut bread into very small cubes. Add to crab meat in mixing bowl.
- Mince onion and celery and add to mixing bowl. Sprinkle in lemon juice, milk, salsa, parsley and pepper. Mix well.
- Heat oil in a skillet over medium heat. Using an ice cream scoop, place crab meat in hot oil. Press with a spatula or pancake turner to flatten. Brown one side then flip and brown the second side (about 7 minutes per side).
- Serve Crab Cakes with deli potato salad and sliced peaches.
