Serves 4

Change the Serving Size

12 ounces canned crab meat
2 eggs
2 slices bread
4 ounces onion
2 stalks celery
1 tablespoon & 1 teaspoon lemon juice
2 teaspoons milk
1 tablespoon & 1 teaspoon salsa
1 dash pepper
1/4 teaspoon dried parsley
1 tablespoon & 1 teaspoon olive oil
2 cups potato salad
2 cups sliced peaches

Directions
  1. Drain crab meat and place in a mixing bowl. Beat egg into crab meat.
  2. Cut bread into very small cubes. Add to crab meat in mixing bowl.
  3. Mince onion and celery and add to mixing bowl. Sprinkle in lemon juice, milk, salsa, parsley and pepper. Mix well.
  4. Heat oil in a skillet over medium heat. Using an ice cream scoop, place crab meat in hot oil. Press with a spatula or pancake turner to flatten. Brown one side then flip and brown the second side (about 7 minutes per side).
  5. Serve Crab Cakes with deli potato salad and sliced peaches.
