- Drain chicken and place in a skillet. Add undrained canned tomatoes and parmesan cheese. Stir and heat over medium until thickened.
- While chicken and tomatoes heat, dice onions and green bell peppers.
- Toast sandwich buns and top with chicken and tomatoes. Sprinkle diced vegetables and grated mozzarella cheese over the top and serve.
