Black-Eyed Peas Black Beans and Chicken Stew

Warm up your family with a hearty chicken and legume stew. Colorful, spicy and aromatic this healthy meal will tantalize all your senses.

cooked chicken
tomatoes, canned, diced, no salt
onion
zucchini
green bell pepper
garlic
black beans, canned, less sodium
black-eyed peas, canned
sliced jalapenos, canned
water
cilantro
pepper
ground cumin
red wine vinegar

Directions
  1. Dice chicken and place in saucepan with undrained tomatoes.
  2. Dice onion, bell peppers, zucchini and garlic and add to saucepan.
  3. Drain and rinse black beans and black-eyed peans and add to stew along with jalapenos, and water. Sprinkle in cilantro, pepper, cumin seed and red wine vinegar. Stir to blend.
  4. Heat on medium high until bubbly, stirring often. Reduce heat to low and simmer for 15 to 20 minutes or until vegetables are tender.
