Black-Eyed Peas Black Beans and Chicken Stew

cooked chicken
tomatoes, canned, diced, no salt
onion
zucchini
green bell pepper
garlic
black beans, canned, less sodium
black-eyed peas, canned
sliced jalapenos, canned
water
cilantro
pepper
ground cumin
red wine vinegar
Directions
- Dice chicken and place in saucepan with undrained tomatoes.
- Dice onion, bell peppers, zucchini and garlic and add to saucepan.
- Drain and rinse black beans and black-eyed peans and add to stew along with jalapenos, and water. Sprinkle in cilantro, pepper, cumin seed and red wine vinegar. Stir to blend.
- Heat on medium high until bubbly, stirring often. Reduce heat to low and simmer for 15 to 20 minutes or until vegetables are tender.
