Avocado and Cucumber Sandwich

Healthy vegetables with a tangy sauce in a whole wheat sandwich make a delicious meatless meal.

Dijon mustard
lemon juice
Ranch dressing
wheat bread
avocado
cucumber
tomato
sprouts
grapes

Avocado and Cucumber Sandwich

Directions

  1. Mix together mayonnaise, mustard, lemon juice and Ranch dressing. Spread over bread slices.
  2. Layer avocado, cucumber and tomato slices onto one slice of bread. Top with sprouts and second slice of bread.
  3. Serve with grapes.
