Bake a fish fillet with peppers, onions and zucchini wrapped in parchment paper to seal in flavors and give you an easy clean up.

Parchment Baked Fish

Serves 4

Change the Serving Size

4 fish fillets
1/4 cup butter or margarine
8 ounces onion
4 ounces red bell pepper
8 ounces zucchini
1/4 cup lemon juice
1 dash dried tarragon
1 dash pepper
4 side salads

Grocery Shopping List for Parchment Baked Fish

Directions
  1. Preheat oven to 325 degrees.
  2. Dice onion and julienne red bell pepper and zucchini.
  3. Place fish fillet on parchment paper. Dot with butter or margarine.
  4. Arrange vegetables over fish. Sprinkle lemon juice, tarragon and pepper evenly over the fish and vegetables.
  5. Wrap parchment paper around fish and fold the corners. Place in a shallow baking dish folded side down and bake in oven for 20 minutes. Unwrap and serve with salad.
