Serves 4

Change the Serving Size

12 ounces lean ground beef
1 cup salsa
1 cup canned corn, drained
1/4 cup mayonnaise
2 teaspoons chili powder
1 cup tortilla chips, crushed
2 ounces shredded pepper jack cheese
4 ounces tomatoes
1 pinch dried cilantro
1 spritz non-stick cooking spray

Directions
  1. Brown meat in a skillet over medium heat. Drain off any excess fat.
  2. Preheat oven to 350 degrees.
  3. Stir salsa, corn, mayonnaise and chili powder into meat.
  4. Spray a casserole dish with non-stick cooking spray.
  5. Spread meat mixture into casserole dish. Top with crushed chips and shredded cheese.
  6. Bake for 20 minutes or until top is lightly brown and crispy.
  7. Chop tomato and place on top of casserole. Sprinkle lightly with dried cilantro.
