Serves 4

Change the Serving Size

2 ounces onion
8 stalks fresh cilantro
4 ounces poblano pepper
1 tablespoon olive oil
1 dash cumin
1 pound ham
1 cup pineapple tidbits canned in juice (undrained)
8 flour tortillas (soft taco size)
8 slices tomato

Directions
  1. Chop onion, cilantro and pepper and place in a skillet with oil. Turn heat on to medium.
  2. Sprinkle cumin over vegetables and stir. Chop ham into chunks and add to skillet.
  3. Continue cooking and stirring until ham is beginning to brown. Add pineapple and let everything simmer until most of the pineapple juice has been absorbed. Stir often.
  4. Spoon ham mixture into flour tortillas, fold and serve with tomato slices.
