Ginger Pork Chops with Whipped Potatoes - Meat and potatoes with an oriental twist. Broiled pork chops flavored with soy sauce, honey and ginger served with whipped potatoes and frozen vegetables.

Serves 4

4 pork loin chops
2 tablespoons & 2 teaspoons soy sauce
1 tablespoon & 1 teaspoon water
2 teaspoons cornstarch
1/2 cup honey
2 cloves garlic, minced
1/4 teaspoon ground ginger
1 pound potato
1 tablespoon & 1 teaspoon margarine
1 tablespoon & 1 teaspoon milk
4 ounces frozen pearl onions
1 cup frozen peas
1 tablespoon & 1 teaspoon water
1 tablespoon & 1 teaspoon margarine
1 dash pepper

Grocery Shopping List for Ginger Pork Chops with Whipped Potatoes

Directions
  1. Peel potatoes, cut into cubes and place in a saucepan. Cover completely with water and turn heat on to medium-high.
  2. Mix together soy sauce, water, cornstarch, honey, garlic and ground ginger. Set aside.
  3. Place pork chops in a shallow baking dish. Turn oven on to broil and cook pork chops until one side is golden brown.
  4. Turn chops and brown second side. Turn off oven.
  5. Drizzle ginger sauce over pork chops and return to oven. Do not turn on any heat.
  6. Place onions and peas in a saucepan with water, margarine and pepper. Turn burner on to medium-low. Heat until warm, stirring frequently. Add more water if necessary.
  7. Drain potatoes and place in a bowl. Add margarine and milk and use an electric mixer to whip.
  8. Remove pork chops from oven and serve with potatoes and vegetables.
