8 ounces cooked chicken
1 cup canned diced tomatoes
2 ounces onion
2 ounces green bell pepper
2 ounces red bell pepper
2 ounces orange bell pepper
1 cup canned pinto beans
1/4 cup canned diced jalapenos
3 cups water
1 cup tomato sauce
1/4 cup non-fat sour cream
12 sprigs fresh cilantro
1 ounce crushed tortilla chips

  1. Dice chicken and place in a saucepan with undrained tomatoes.
  2. Dice onion and bell peppers and add to saucepan.
  3. Drain and rinse pinto beans and add to soup along with jalapenos.
  4. Stir in water, tomato sauce and sour cream.
  5. Mince cilantro and stir into soup along with crushed tortilla chips.
  6. Heat soup to a gentle boil over medium heat. Reduce heat to low and cover.
  7. Simmer for 20 minutes or until vegetables are tender.
