Serves 4

Change the Serving Size

2 cups instant rice
2 cups water
1/4 cup Italian salad dressing
1/4 cup salsa
6 ounces red bell pepper
6 ounces yellow bell pepper
6 ounces green bell pepper
6 ounces red onion
1 dash pepper
1 dash garlic salt
4 ounces grated cheddar cheese

Directions
  1. Place rice, water, Italian salad dressing and salsa in a skillet and turn heat on to low.
  2. Dice peppers and onion and add to rice. Sprinkle pepper and garlic salt over the top and stir to mix.
  3. Continue cooking on low until all the moisture has been absorbed. Stir occasionally.
  4. Turn heat up to medium and cook until rice is slightly toasted (five or ten minutes). Stir often.
  5. Turn heat back to low and sprinkle grated cheese over top. Serve when cheese has melted.
