Black Bean and Chorizo Burrito

Mexican sausage and black beans with peppers, onions and garlic rolled into a fried tortilla and topped with salsa and cheese.

Black Bean and Chorizo Burrito

Serves 4

Change the Serving Size

1 tablespoon & 1 teaspoon olive oil
2 teaspoons garlic, chopped
2 ounces onion, chopped
4 ounces tomato, chopped
1 ounce jalapeno pepper, diced
2 ounces yellow bell pepper, chopped
8 ounces ground chorizo (Mexican sausage)
1 cup canned black beans, drained and rinsed
1 dash cumin
1 dash cilantro
1 dash pepper
1 tablespoon & 1 teaspoon olive oil
4 flour tortillas , large
1/4 cup salsa
1 ounce cheddar cheese, grated
side salad

Grocery Shopping List for Black Bean and Chorizo Burrito

From kitchen to table in

  1. Cook garlic, onion, tomato and peppers in olive oil over medium heat until tender.
  2. Stir in chorizo and continue cooking over medium until browned.
  3. Stir in black beans, cumin, cilantro and pepper. Gently mash beans as you mix everything together.
  4. In a separate skillet, heat olive oil over medium heat. Lightly brown tortilla on both sides in hot oil. (If preparing more than one burrito, heat oil one serving at a time.)
  5. Spoon the meat and bean mixture into the center of the tortilla. Fold the sides toward the center and then fold the ends under.
  6. Top with salsa and grated cheese and serve with side salad.
