Serves 4

Change the Serving Size

4 slices bacon
12 ounces extra lean ground beef
2 ounces onion
2 cloves garlic
2 ounces green bell pepper
2 ounces yellow bell pepper
8 ounces tomatoes
1/4 cup salsa
1 cup water
1 teaspoon lime juice
1 teaspoon red wine vinegar
1/2 cup uncooked rice
1 dash pepper
1 dash cumin

Directions
  1. Cook bacon in a skillet over medium heat until crisp and set aside.
  2. Pour off most of the bacon grease leaving enough to barely cover the bottom of the pan.
  3. Cook ground beef in bacon drippings until no longer pink.
  4. While meat cooks, chop onion, green bell pepper, yellow bell pepper and tomatoes. Add to skillet along with salsa.
  5. Mix together water, lime juice, vinegar and garlic.
  6. Add rice to skillet. Pour water mixture over the top. Sprinkle with pepper and cumin.
  7. Cover, turn heat to low and simmer for 35 minutes without lifting lid.
  8. Remove cover and stir. If water still appears when stirring, recover and continue simmering. Check every 5 minutes.
  9. Crumble bacon on top and serve. Great with crusty Italian bread.
