Serves 4

Change the Serving Size

2 teaspoons olive oil
4 ounces onion
1 dash pepper
1 cup water
1 pound potatoes
1 tablespoon & 1 teaspoon Italian salad dressing
1 dash basil
12 ounces canned salmon
2 tablespoons mayonnaise
1/2 cup Italian bread crumbs
2 eggs
1 tablespoon & 1 teaspoon lemon juice
non-stick cooking spray
prepared salad

Directions
  1. Preheat oven to 400 degrees.
  2. Pour olive oil into an oven-proof baking dish. Tilt dish to spread the oil over the bottom of the dish.
  3. Peel potatoes and slice thin. Place in baking dish.
  4. Dice onion and add to potatoes.
  5. Dribble Italian dressing over potatoes and onions. Pour water over the top and then sprinkle with seasonings.
  6. Cover and place in oven. Set timer for 45 minutes.
  7. Drain salmon and put into a mixing bowl. Add egg, mayonnaise, lemon juice, and bread crumbs. Mix well, set aside in the refrigerator.
  8. When timer rings, uncover potatoes and continue cooking.
  9. Spray a griddle with non-stick spray and heat on medium.
  10. Using an ice-cream scoop, place salmon mixture onto griddle and press flat.
  11. Cook until one side is brown. Turn with a pancake turner and brown other side.
  12. Serve salmon patties and potatoes with a prepared salad.
